JOB STANDARDS:

  • High school education or equivalent
  • Safe Serve or Food Handler Certification
  • Comprehensive knowledge of cooking for large groups.
  • Two years minimum institutional cooking experience or equivalent
  • Excellent time management skills.
  • Have some knowledge of food preparation and general kitchen operations.

JOB RESPONSIBILITIES AND DUTIES:

  • Bake, roast, stew, and steam cook meat, fish and fowl according to recipes; baste to retain flavor. Test cooked food to determine if properly cooked and seasoned, make gravies, stocks, dressings, sauces, and soups.

  • Prepare special therapeutic diets as specified by the dietitian and food service supervisor, checking trays to be sure they are accurate.

  • Direct and assist in daily and scheduled cleaning of equipment and understands departmental established sanitary standards and will report to supervisor any conditions that may violate these regulations.

· Perform other kitchen duties as directed, such as but not limited to cleaning and preparation of foods, cleaning appliances, tables, containers, and tools.

*Follow state and federal regulations as outlined in the Home's policies and procedures for Dietary Service, infection control, equipment usage, food storage, food distribution and food service under sanitary conditions.

*Follow all safety, security, exposure control and hazardous waste policies and procedures.

PHYSICAL AND COGNITIVE REQUIREMENTS TO PERFORM THE ESSENTIAL JOB FUNCTIONS:

Cook is able to:

  • Stand 85% to 100% of typical work shift.
  • Lift/carry objects more than 20lbs, and push/pull carts more than 50lbs.

· Walk, bend, twist, stretch, lift, be on one's feet for extended periods of time.

  • Concentrate on moderate detail related to table set-up and therapeutic diets.
  • Remember simple and multiple tasks and assignments related to job responsibilities without frequent reminders.
  • Read and comprehend menus and recipes.
  • Adequately hear within the range of a raised voices, receive verbal instructions, and answer phone calls.
  • Communicate effectively in English with Residents and others.
