Sodexo Executive Chef 3 in NEW YORK, New York
Unit Description
Sodexo is looking for an Executive Chef 3 for busy account located in New York, NY
Gouverneur Hospital, located on the Lower East Side of Manhattan, is a 295 bed Long-Term Care, Union account, with a Cook Serve meal delivery system. Reporting to the Operations Manager, the Executive Chef 3 will lead a team of approximately 7 employees and manage the culinary operations and food production for the Cafe', Patient Dining and a small amount of on-site catering services. This role will also be responsible for ensuring purchasing and inventory compliance, as well as managing food cost and production planning.
Prior culinary experience in a health-care care environment required.
Duties include:
Client interaction
Counting Cafe' deposits, cash drawers, safe balancing
Managing the daily food production including production planning and controls
Ensuring Sodexo Culinary Standards including recipe compliance and food quality
Labor and food cost controls and compliance
Menu Planning for Retail and Catering menus
Food Production Gold Check Audit Compliance
Inventory Management
Food Waste Management
Sanitation and Ecosure Compliance
The successful candidate will have:
at least 3-4 years lead culinary experience
a strong working knowledge of food safety and sanitation guidelines
the ability to stay current with the latest culinary trends as well as excellent leadership, communication and customer service skills

Qualifications & Requirements
Basic Education Requirement - Bachelor’s Degree or equivalent experience
Basic Management Experience - 3 years
Basic Functional Experience - 3 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
